Online teaching
I first came to USP as a distance student, and my own students are now scattered all over the Pacific, so I teach all my courses in online and blended modes.
For example, in LL311 English in the Pacific, we look at how English has changed throughout history, how it is used differently in different contexts, and how people can old negative attitudes towards what they perceive to be 'bad English'. There are plenty of great materials available on these topics, such as this interactive timeline from the British Library, Youtube clip by Stephen Fry, and TED talk by Jamila Lyiscott.

However, there is very little available about the way English is used in the Pacific region in particular, so it is necessary to develop the majority of materials in-house, using real life examples from around the region, and guiding English teachers on the use of strategies that are relevant to Pacific schools. These materials include online lecture videos, Moodle books of notes, and a range of activities to complete.
